Slow & Low Red Cabbage

Serves 8-10
  • 1 Large Red Cabbage, sliced finely 
  • 2 Red Onions, finely sliced
  • 2 Grated Apple (preferably reddish green so a little sweeter in taste)
  • 1 Tsp Cinnamon 
  • 1 Tsp Salt
  • 1 Tsp Pepper
  1. Preheat the oven to 150. 
  2. Heat a large frying pan. Add in 1 tbsp of light olive oil.  Once hot add the onions and fry until they begin to soften (4-6 mins)
  3. Transfer the onions into an oven proof casserole dish with a lid. Add in the rest of the ingredients and stir well.
  4. Make sure it’s covered then place in the oven and cook for 2 hours.
  5. Eat straight away or refrigerate and enjoy within 2 days. 
  6. To reheat place back in a hot oven (180/200 degrees) cook for 30 minutes or until piping hot.
