Serves 8-10
- 1 Large Red Cabbage, sliced finely
- 2 Red Onions, finely sliced
- 2 Grated Apple (preferably reddish green so a little sweeter in taste)
- 1 Tsp Cinnamon
- 1 Tsp Salt
- 1 Tsp Pepper
- Preheat the oven to 150.
- Heat a large frying pan. Add in 1 tbsp of light olive oil. Once hot add the onions and fry until they begin to soften (4-6 mins)
- Transfer the onions into an oven proof casserole dish with a lid. Add in the rest of the ingredients and stir well.
- Make sure it’s covered then place in the oven and cook for 2 hours.
- Eat straight away or refrigerate and enjoy within 2 days.
- To reheat place back in a hot oven (180/200 degrees) cook for 30 minutes or until piping hot.
