The Ultimate Fridge Raider Shakshuka Recipe


Make this your own by adding in any left over veg in your fridge! Red onions, courgettes, aubergine, carrots, the list is endless!

 

Serves 2

4 x Tomatoes, chopped

2 x Peppers, chopped 

1 Tbsp Olive oil

Salt & pepper

1 Tbsp Seasoning ( such as Cajun, Piri Piri, Shawarma)

4 Eggs

3 Tbsps Greek yogurt

Preheat oven to 180c

To an oven proof dish add: Tomatoes & peppers plus any other veg you are using. Add in the olive oil. seasoning and mix well. 

Roast for 20/30 mins.

Add in the eggs and season again with salt & pepper.

Cook for a further 10mins. Eggs whites should be opaque.

Top with yogurt! Chilli oil and fresh herbs.
