Chicken & Spinach Curry (Saag Chicken)

Serves 4  4/5 Chicken Breasts, Cubed Chicken Marinade 1 Tbsp reg mayonnaise  1 Tsp turmeric  1 Tsp cumin 1 Tsp ground coriander  1 Tsp cinnamon  Curry 1 Tbsp sunflower or coconut oil 1 Onion, chopped 1 Large clove garlic, chopped 1 Heaped Tbsp curry powder 1 Tbsp Bouillon stock/chicken stock 1 Bag of frozen leaf spinach, thawed (remove bag from freezer a few hours before so it begins to defrost) Add all the marinade ingredients into a clean bowl and stir well to combine. Hamantaschen Energy Balls

These are a fun little sweet treat! They are Gluten Free, Dairy Free and refined sugar free.... a nice healthy alternative to bakery Hamantaschen!  You could even add a little ground flaxseed or protein powder, just lessen the amount of ground almonds!! Poppy Seed Filling 1/2 Cup Pitted Dates  2 Tbsp Poppy seeds I Tbsp Coconut oil 1 Tsp cocoa powder (optional) Outer Layer 1 cup Ground Almonds 1/2 cup Pitted Dates 1/2 cup Almond Butter 1 Tsp Vanilla extract 1/2 Tsp Ground Cinnamon 1 Pinch Kosher salt NOTE: Before you start if the dates aren't soft and gooey then soak them in boiling water for 30 mins and drain before using.
