Sweet Potato Pizza

Serves 2  1 Large Sweet potato or 2 small, grated  2 Eggs 1 Tsp bouillon 1 Tsp Paprika  1 pinch pepper Preheat oven grill to medium. Mix all the ingredients together. On the Hob heat a large oven proof frying pan with 1 Tbsp oil. Pour in enough mixture to cover the base, about 1cm thick. Leave to cook for 2-3 minutes then transfer to the oven and grill until firm on top (4-5 mins). Use a flat spatula to make sure the base is loose then slide out the pan onto a plate. Top with anything from tomato & cheese to smoked salmon & avocado. Note: Add in grated courgette or use regular potatoes! Tip: Involve your kids... let...

Homemade Fish Fingers - Passover Friendly

Serves 4 kids, 2 hungry adults 500g Cod or any white fish, cut in strips (fish finger sized) 1 large egg, whisked 1 small clove garlic, finely grated 75g ground almonds 2 Tbsp ground flaxseed (optional you can replace with more sesame or almonds) 2 Tbsp sesame seeds   1 tsp Salt pinch of black pepper 1/2 tsp turmeric Rinse fish in cold water and pat dry with a piece of kitchen roll. Place egg in a mixing bowl and add the garlic and 1/2 the tsp of salt. Add the fish, cover and refrigerate for 1-2 hours. Preheat oven to 180 degrees. Remove fish from fridge. Double Ketchup Burgers (Extremely Kid Friendly)

My Kids Favourite Supper.... as they call it 'easy peasy ketchup squeezy !' Serves 4/6 kids 1 llb Steak Mince (only the best will do!) 1 Small White Onion, grated 1 Carrot, grated 1 Tbsp Ketchup Preheat oven to 180 degrees Heat a small frying pan with 1 tsp of coconut oil add the onion and stir until golden. Set aside to cool. Add the rest of the ingredients into a mixing bowl. Add the onion once cool and mix until well combined.  Form into balls (roughly 1 heaped tbsp of mixture each) then flatten into patties. Lay on a lined baking tray and bake in the oven for 20 minutes.

Cauliflower & Sweetcorn Soup

So easy, so delicious. I find soup so boring!.... I'm always looking for fun options! This is so yummy and comforting....i actually prefer it cold but then i do have a thing for cold soups! Also if you remove all the stock before blending, so its really thick you can substitute it for béchamel sauce.....great in lasagne.... or as a creamy pasta sauce.   1 Tbsp Olive oil 3 Cloves Garlic, chopped 1 Head of cauliflower 1 Tin sweetcorn 1 Stock cube of your choice Enough water to cover the cauliflower Heat the olive oil on a medium heat in a medium sized saucepan. Hamantaschen Energy Balls

These are a fun little sweet treat! They are Gluten Free, Dairy Free and refined sugar free.... a nice healthy alternative to bakery Hamantaschen!  You could even add a little ground flaxseed or protein powder, just lessen the amount of ground almonds!!
