Oat Pancakes Chia Jam & Nut Butter Drizzle

I Makes 6 pancakes 2 Eggs,whisked (can use 3 egg white) 1 Cup Quick Cook Oats  1 Tsp Ground Cinnamon  1 Tbsp Self Raising Flour  Gluten free Oat Milk (Almond milk) - Add enough to make the mixture pourable but still thick. Mix the first 4 ingredients in a bowl until well combined. Add the milk until you reach a thick but pourable consistency.  Heat a pan with 2 Tbsp of coconut oil. When melted pour half the oil into the pancake Batter and stir until combined. Pour a ladle full of the batter into the pan. Let it cook for 2-3 minutes before flipping. Shawarma Roasted Butternut & Spelt Salad with Tahina

Creamy Sweetcorn Dip

Creamy Sweetcorn Dip Serves 6 6 Corn on the cob 1 Red Pepper, finely diced 1 Green Pepper, finely diced 1 Chilli, deseeded (optional) 1/2 Red onion, finely diced 1 Tbsp Mayonnaise (can substitute with well mashed avocado) Juice of 1/2 a Lime 1 Tsp Salt & 1/2  Tsp Fresh Ground Pepper  A handful of chopped Chives or Coriander to serve Heat the oven on a high grill setting.  Wash corn and put the cobs on a piece of foil under the grill. Thai Blackened Salmon with Satay Sauce

Salmon 1 Side of salmon 1 Pkt Waitrose cooks ingredients thai mix 3 Tbsp Tamari 1 Tbsp runny honey 1 Lime Satay sauce  1 Tbsp of coconut oil (always aromafree, Higher Nature is my favourite) 1 Heaped Tbsp crunchy peanut butter  1 Tin coconut milk (i really like Biona i find others taste fake and are full of stabilisers and thickeners) Zest and juice of 1 Lime 2 Tbsp Tamari 1. Miso Chicken Bites with Miso Mayonnaise

  These are delicious served hot or cold as a canapé or served along side soup! You can also serve them on top of stir fried courgette noodles! The are great to have in the fridge as a quick, healthy snack and also travel well making them perfect for lunch boxes!!   1Llb Chicken mince.
